  • 3 tbsp coconut oil
  • 1 lb sliced mushrooms
  • 3 leeks, sliced (white and light green parts only)
  • 1 carrot, peeled and finely chopped
  • 1 rib celery, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh thyme
  • 1/4 tsp each salt and freshly ground pepper
  • 1 can (540 mL) white beans, drained and rinsed (no salt added)
  • 2 plum tomatoes, finely chopped
  • 1 can coconut milk
  • 1 tbsp tamari
  • 1 packet (38 g) Qi’a™ Superfoods Hot Oatmeal Superseeds & Grains
  • 8 cups baby spinach
  • 2 tbsp chopped fresh chives


Oat Topping:

  • 2 packets (38 g each) Qi’a™ Superfoods Hot Oatmeal Superseeds & Grains
  • 2 tbsp coconut oil
  • 1/4 cup chopped hazelnuts
  1. Preheat oven to 400°F.
  2. Heat coconut oil in large skillet set over high heat.
  3. Sauté mushrooms for 10 minutes or until golden brown.
  4. Stir leeks, carrot, celery, garlic, thyme, salt and pepper.
  5. Cook stirring for 4 to 5 minutes or until vegetables soften.
  6. Stir in beans, plum tomatoes, coconut milk and tamari.
  7. Bring to a boil. Reduce heat to medium-low.
  8. Simmer for 10 minutes or until mixture starts to thicken.
  9. Stir in Qi’a, spinach and chives.
  10. Scrape into coconut oil greased 8-inch square glass baking dish.
  11. Sprinkle evenly with Oat Topping.
  12. Bake about 25 minutes or until topping is golden.
  13. Let stand for 10 minutes and serve.


Oat Topping: Toss oatmeal with coconut oil and hazelnuts until combined and consistency of a crumble topping.
