  • 1/2 oz dried porcini mushrooms
  • 1 cup boiling water
  • 2 tbsp coconut oil
  • 1 cup sliced cremini mushrooms
  • 1 onion, finely chopped
  • 1 small carrot, finely chopped
  • 1 rib celery, finely chopped
  • 1 clove garlic, minced
  • 2 tsp minced ginger
  • 1 tbsp garam masala
  • 1/4 tsp each salt and freshly ground pepper
  • 4 packets (38 g each) Qi’a™ Superfoods Hot Oatmeal Superseeds & Grains
  • 1 cup coconut milk, divided
  • 1 tsp turmeric powder
  • 2 cups stemmed and chopped kale
  • 2 tbsp lemon juice
  • 2 tbsp chopped fresh parsley
  1. Pour boiling water over dried porcini mushrooms.
  2. Soak for 15 minutes or until softened; strain and reserve soaking liquid.
  3. Chop rehydrated mushrooms.
  4. Meanwhile, heat coconut oil in large skillet set over medium heat.
  5. Add mushrooms, onion, carrot, celery, garlic, ginger, garam masala, salt and pepper.
  6. Cook, stirring occasionally, for 5 to 7 minutes or until vegetables are tender.
  7. Stir in Qi’a. Cook for 1 to 2 minutes or until coated.
  8. Stir in chopped rehydrated mushrooms and soaking liquid.
  9. Cook until is almost evaporated.
  10. Stir in 1/2 cup coconut milk and turmeric.
  11. Cook, stirring frequently, for 1 to 2 minutes or until Qi’a absorbs coconut milk.
  12. Stir in an additional 1/4 cup coconut milk, cook stirring until absorbed.
  13. Stir in kale until wilted.
  14. Remove from heat.
  15. Stir in lemon juice and parsley and remaining coconut milk.
  16. Serve immediately.
