Mixed Berry & Bran Fruit Crisp


This simple one-bowl fruit crisp is made with frozen berries, healthy cereal, and oats. Use organic cane sugar or coconut sugar for a more naturally-sweetened dessert. Serve this fruity berry crisp with coconut whip for a delicious cold-weather dessert that still whispers “summer”.


For the crisp:

  • 3 cups (750ml) frozen mixed berries (I used blueberries and raspberries)
  • 1 tbsp (15ml) cornstarch
  • 3 tbsp (45ml) sugar
  • ½ cup (125ml) SmartBran Cereal
  • ¼ cup (60ml) flour
  • ½ cup (125ml) Old Fashioned Oats
  • ⅓ cup (80ml) melted vegan butter

For the coconut whip:

  • 14 fl. oz (414 ml) can of high quality coconut cream, chilled overnight
  • 2 tbsp berry sugar
  • Flaked coconut, to serve

For the crisp:

  1. Preheat oven to 350°F. Line a loaf pan with parchment paper.
  2. Layer berries into the pan.
  3. Sprinkle evenly with sugar and cornstarch.
  4. In a bowl, combine SmartBran Cereal, sugar, flours, old fashioned oats, and vegan butter. Stir well until the mixture sticks together a little bit.
  5. Top the previously sprinkled berries evenly with the crumble mixture.
  6. Bake for 40 minutes or until the topping appears lightly golden-brown.
  7. Serve with coconut whip (directions below) and flaked coconut.

For the coconut whip:

  1. Open chilled coconut cream and scoop out the thickest portion. Discard or save the remaining coconut water for smoothies.
  2. Beat the thick coconut cream with 2 tbsp berry sugar. Beat on high speed until coconut cream is thick and airy.
  3. Chill until needed.
